Ellenos Vanilla Bean yogurt makes for an easy, light, and remarkably delicious frosting for fruit pizza. Decorated with your favorite fruits, Ellenos fruit pizza is the quintessential summer dessert.
Ingredients:
- 1 cup Ellenos Vanilla Bean yogurt
- ½ cup unsalted butter, room temperature
- 1 large egg
- 1 ¼ cups all-purpose flour
- ¾ cup granulated sugar
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 2 kiwis, peeled and sliced
- 1 cup blueberries
- 1 cup strawberries, sliced

Instructions
- Make the crust. In a stand mixer or with a handheld mixer, cream the butter and sugar together for 2 minutes. Add egg and vanilla and mix for another 2 minutes, being sure to scrape down the sides of the bowl. Add flour, baking powder, and salt. Mix until combined. Chill the dough for 30 minutes.
- Bake the crust. Preheat the oven to 350°F. Line a baking sheet with parchment paper. Roll the chilled dough out to a 1/4-1/2″ thick circle. Bake for 20-25 minutes. Allow the crust to cool completely.
- Make it pretty! Dollop the Ellenos Vanilla Bean yogurt evenly on the crust and spread to cover. Decorate with desired fruit.
- Keep refrigerated and serve cold. Leftovers can be stored covered in the fridge for up to 3 days.
