Ellenos Vanilla Bean yogurt makes for an easy, light, and remarkably delicious frosting for fruit pizza. Decorated with your favorite fruits, Ellenos fruit pizza is the quintessential summer dessert.

Ingredients:

  • 1 cup Ellenos Vanilla Bean yogurt
  • ½ cup unsalted butter, room temperature
  • 1 large egg
  • 1 ¼ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 kiwis, peeled and sliced
  • 1 cup blueberries
  • 1 cup strawberries, sliced

 

Equipment:

  • Large mixing bowl & handheld mixer or stand mixer
  • Sheet pan

Instructions

  1. Make the crust. In a stand mixer or with a handheld mixer, cream the butter and sugar together for 2 minutes. Add egg and vanilla and mix for another 2 minutes, being sure to scrape down the sides of the bowl. Add flour, baking powder, and salt. Mix until combined. Chill the dough for 30 minutes.
  2. Bake the crust. Preheat the oven to 350°F. Line a baking sheet with parchment paper. Roll the chilled dough out to a 1/4-1/2″ thick circle. Bake for 20-25 minutes. Allow the crust to cool completely.
  3. Make it pretty! Dollop the Ellenos Vanilla Bean yogurt evenly on the crust and spread to cover. Decorate with desired fruit.
  4. Keep refrigerated and serve cold. Leftovers can be stored covered in the fridge for up to 3 days.
